Pizza is always a favorite with most people. But it is one of the biggest no-no's for those looking to shed away the flab. Try this recipe for a healthy alternative to your favorite fast food.
Ingredients Crust: - 3 eggs
- 1/3 cup of club soda
- 3/4 cup of light/low fat cream
- 1 3/4 cup of soy flour
- 1 teaspoon salt
Sauce: - 1/3 cup of diced onions
- 1/3 cup of chopped garlic
- 3 large of Roma tomatoes, diced
- 1/2 cup of tomato puree, no added sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried mixed herbs
- Ground black pepper to taste
- Salt to taste
- 1/4 cup of orange juice, freshly squeezed
- 1 tablespoon of olive oil
Toppings - 1 cup of shredded cheddar cheese, preferably fat free or low fat
- 1 cup of shredded mozzarella cheese, preferably fat free or low fat
- 5 ounces pepperoni
- 1/2 cup crumbled sausages
- 1/2 cup sliced red peppers
- 1/2 cup sliced green peppers
- 1/2 cup sliced red onions
- 1/2 cup Portobello or button mushrooms, sliced
- 1 tablespoon extra virgin olive oil
- 2 pinches dried oregano
Instructions Crust - To make the crust, you need 2 12-inches pizza pans. Spray the pans with vegetable oil. All surface area of pan should be greased with vegetable oil.
- Mix all the crust ingredients into a bowl. Stir the mixture well until it reaches a smooth, thick a pancake like batter consistency.
- Using a spoon or a spatula, spread the batter on to the pan as evenly as possible.
- Bake the crust in an oven with a temperature of 250 degrees F until its firm to touch or light golden brown.
Sauce - To make the sauce, in a heated saucepan, add the olive oil.
- Into the olive oil, add the onions and garlic and stir.
- When the onions and garlic reach a light golden brown colour, add the herbs, salt and pepper.
- Into the mixture, add the remaining ingredients and let it simmer for about 2-5 minutes until the tomatoes are cooked.
Pizza - Now comes the easy part. Spread the sauce on both the pizza crust.
- On the sauce, add a layer of cheddar and mozzarella cheese.
- To the cheese, spread evenly on both crust, the pepperoni, sausages, peppers, mushrooms and the onions onto the crusts.
- Finish with another tiny layer of cheese.
- Sprinkle the dried oregano on top of the cheese and drizzle the 2 crusts with olive oil.
- Place both crust into an oven to bake at a temperature of 400 degree F.
- When the cheese turns into a light golden brown shade, the pizzas are ready to be taken out from the oven.
