Scrambled eggs with Red and Green Bell Peppers

Breakfast...your most important meal of the day. After going on for hours without a meal throughout the night, breaking the fast should be with something healthy and packed with the right stuff.

That means enough carbs, protein, vitamins and minerals to give you the energy you need to fuel the rest of your day.  

Scrambled eggs with red and green bell peppers


Ingredients

Servings : 1

1/2 red bell pepper

1/2 green bell pepper

2 eggs

Salt

Pepper

1/4 cup reduced fat cheese

1 tablespoon of low cholesterol butter spread

1/4 cup of low fat or skim milk

Preparation

   1. Beat 2 eggs in a bowl.
   2. Add milk and cheese to the eggs and mix well. Season the eggs with a pinch of salt and pepper each.
   3. In a hot pan, add butter and chopped red and green peppers.
   4. Once peppers are slightly cooked, add eggs mixture into the pan.
   5. Fry until the eggs are cooked.
